Have a Cocktail with Sparkling Ice


Enjoy the summer nights with a refreshing beverage!

Sparkling Paloma

INGREDIENTS
½ oz Tequila
1 oz Fresh Grapefruit Juice
½ oz Fresh Lime Juice
½ oz Agave Nectar
Grapefruit Peel for garnish

DIRECTIONS
Combine tequila, fresh grapefruit juice, fresh lime juice, and agave nectar into a cocktail shaker with ice. Shake well and strain into a glass over ice. Add a splash of Sparkling Ice Pink Grapefruit. Garnish with grapefruit peel and serve.


Citrus Freeze

INGREDIENTS
1 oz tequila
1 oz lime juice
1 lime wedge

DIRECTIONS
In a blender, add one cup of ice, tequila, Sparkling Ice Lemon Limeand lime juice. 
Blend until smooth and pour into a glass and serve with a lime wedge.

AMERICAN HERITAGE® Chocolate Stuffed Apple Roses with Chocolate Strawberry Sauce


Mars Chocolate North America has partnered with sites such as Fort Ticonderoga, Colonial Williamsburg, Mount Vernon, The National Archives, Monticello, and The Smithsonian to not only sell AMERICAN HERITAGE® Chocolate, fashioned off ingredient lists from the 1750’s, but also to educate consumers on the history of the Americas through the unique lens of chocolate. 

Some of the aforementioned venues including Smithsonian National Museum of American History, Fort Ticonderoga, National Archives, Old North Church and Genesee Country Village Museum will offer free samples, chats with AHC’s Chocolate Historian and 18th century-inspired chocolate-making demonstrations. AMERICAN HERITAGE® Chocolate has also collaborated with its site partners for a fantastic free E-zine filled with delicious summer recipes and fun facts to share with family and friends while summer entertaining.  A sampling of recipes can be found below:


AMERICAN HERITAGE® Chocolate Stuffed Apple Roses with Chocolate Strawberry Sauce
This special treat comes to us from Florence L. Allen, chef de cuisine at Shield’s Tavern in historic Colonial Williamsburg. 
Serve warm to maximize the sweet apple chocolatey goodness.

Servings: 10-12
Prep Time: 45 minutes
Cook Time: 35 minutes

INGREDIENTS
For the pastry:
  • 1 pack pie dough (frozen or homemade)
  • 3 teaspoons AMERICAN HERITAGE® Chocolate Drink Mix
  • 2 Red Delicious apples, sliced
  • 1 cup water, or more as needed 
  • 1 tablespoon lemon juice
  • 1 tablespoon nuts (your choice), roasted and crushed
  • 10 tablespoons caramel sauce in a squeeze bottle (or preserves of your choice)
  • For garnish: Cinnamon sugar (McCormick® brand)


For the sauce:
  • ¾ cup powdered sugar
  • 2 cup strawberries, diced
  • 2 Tablespoons of AMERICAN HERITAGE® Chocolate Block, shaved


PREPARATION
  1. Preheat oven to 375 degrees, convection setting, low fan.
  2. Prepare the pastry: Roll out the dough onto a lightly floured surface 1/8 inch thick. Sprinkle with 3 tablespoons AMERICAN HERITAGE® Chocolate Drink Mix, or more if desired. Flip the dough and repeat.
  3. Combine water and lemon juice in a microwave-safe bowl. Core two large red apples, then slice into very thin strips with a knife, or use a mandolin for consistency. Place the slices immediately in the bowl.
  4. Place plastic wrap over bowl and microwave for about 1 minute, but no more than 1½ minutes, until the apples are soft but not mushy. Uncover and drain water.
  5. Roll the dough 1/8 inch thick. Slice the dough into strips 2 inches wide x 8 inches long to make 10-12 strips that are 8 inches wide. (This will help cook the pastry evenly.) Square the edges.
  6. Squeeze a line of caramel sauce (or substitute preserves of your choice) across the middle of the dough, then sprinkle with cinnamon sugar, crushed nuts and AMERICAN HERITAGE® Chocolate Drink Mix. Top with a row of apple slices. The caramel sauce holds the apple in place and give it flavor.
  7. Gently fold the pastry over the apple slices, pinch the ends together and roll the apples into a rose-like shape. Use two hands — you'll get the hang of it!
  8. Grease muffin tin with a non-stick cooking spray or vegetable oil and place the pastry roses in tin. Bake for 25-35 minutes. Check the center of the roses with a toothpick to insure doneness. Cool in muffin tin for 10 minutes, then transfer to a cookie rack to cool completely, or serve warm. (They're terrific warm!)
  9. For the sauce: Wash the strawberries, slice off the tops and dice, then place in a sauce pan over medium heat. 
  10. Add powdered sugar and cook with the strawberries until the powder sugar has dissolved, stirring occasionally. Watch closely, it will burn fast.
  11. Remove from heat and stir in 2 tablespoons of shaved AMERICAN HERITAGE® Chocolate Block.
  12. Before serving, pour strawberry sauce in your desired serving dish. Place the pastries on top of the strawberry sauce and drizzle the roses with caramel sauce. Dust with powdered sugar and serve.

Recipes for Meatless Mondays

It’s easy to be veggie-inspired this time of year, isn’t it? Veggie power and meatless meals reign in late summer!

When the farmers markets and grocery stores are overflowing with fresh, crisp produce, meatless meals are the perfect way to put it all to delicious use! No doubt, we knew this was a great time to feature some meat-free recipes featuring products from Pereg Natural Foods and The Cheese Guy.

It was a match made in vegetarian heaven. Pereg proudly bears all natural and non-dairy, lactose-free certification on its entire collection of exotic spices from around the world, as well as their gluten-free pastas, gluten-free cereals and gluten-free flours and their extensive line of all-natural products made from ancient grains. These wildly popular recipes are perfect for Meatless Mondays … or any day of the week, especially in summertime! Try these recipes for meat-free comfort foods that’ll even keep meat-lovers happy – perfect for the whole family.

Quinoa Pasta Mac and Cheese
  • 1 8 oz. package Pereg Gourmet Quinoa Curvo Rigate
  • 2½ Tbsp. all-purpose flour (or brown rice flour)
  • 1 tsp. dry mustard
  • ¼ tsp. nutmeg
  • 4 Tbsp. butter, plus more to butter the pan
  • 1 small onion diced
  • Salt
  • 2 cups milk (2% or whole milk)
  • ½ tsp. black pepper
  • 10 oz. The Cheese Guy Raw Milk Sharp Cheddar Cheese (Shred the cheese for about 3½ cups)
  • 1 cup The Cheese Guy shredded Parmesan cheese
  • ½ cup Pereg Panko breadcrumbs
  • 2 Tbsp. butter melted

  1. Pre-heat oven to 350 degrees F. Bring 4-6 quarts of water with ½ tablespoon salt to a boil in a large stockpot. Add pasta and return to a rapid boil. Cook uncovered stirring occasionally until pasta is al dente, about 6 minutes. Drain well and set aside.
  2. In a small bowl, whisk together flour, dry mustard and nutmeg. In a large stockpot, melt 4 tablespoons butter over medium heat. Then add onions and a pinch of salt and sauté until onions are translucent, 5-7 minutes.
  3. Add the flour mixture to the onions and cook for a few minutes until the fat is absorbed and you form a roux. Then add in the two cups milk and bring to a simmer over medium-high heat. Simmer for 5-10 minutes until sauce is thick and smooth. Add in black pepper, 3 cups cheddar cheese (reserve ½ cup for the topping) and Parmesan cheese and combine. Season to taste with salt. Stir in pasta and mix until combined. Spread the pasta in a 9x9 inch casserole dish.
  4. In a separate bowl, combine Panko breadcrumbs and 2 tablespoons melted butter. Sprinkle mixture and remaining cheddar cheese over the pasta. Bake for 15-20 minutes (uncovered) until cheese is bubbly and the top is lightly browned. Let cool 5 minutes and serve.


Kañiwa Cheese Burger
Kañiwa, a cousin of quinoa, is a tiny nutrient-rich grain that cooks up to a crunchy texture.

2 cups water
½ cup raw Pereg Natural Foods Kañiwa
1 cup water
1 cup cooked chickpeas, smashed, with the skins removed
½ cup Pereg Natural Foods Fine Panko
1 large egg whisked
1 garlic clove minced
¼ cup white onion, minced
¼ tsp. smoked paprika
½ tsp. kosher salt
¼ tsp. cracked black pepper
2 Tbsp. coconut oil
Cheese to taste (The Cheese Guy recommends a creamy, easy-melting Gouda or Havarti)
Combine kañiwa and water in a medium saucepan and bring water to a boil. Lower to a simmer, cover, and simmer for 15-20 minutes or until tender and the water is absorbed. Remove from heat and let cool. You should have 1 cup cooked.
Combine kañiwa with smashed chickpeas, panko, garlic, onion and spices. Form into two big patties or four smaller patties.  Fry 4-5 minutes per side in coconut oil over medium heat until outside is brown and inside is heated through. Melt cheese over top and serve.

Cirque Du Soleil Announces Additional Performances


Performances Now Extended Through August 19th Next to the Greater Philadelphia Expo Center in Oaks!

Cirque du Soleil has premiered in Montgomery County with VOLTA, its first ever Big Top show visiting Oaks, PA. The circus production company also took the occasion of the special event to announce that VOLTA would be presented for an extended stay next to the Greater Philadelphia Expo Center until August 19th. 

With this new creation, the world’s entertainment leader is once again pushing the boundaries of circus arts by integrating several street sports disciplines as well as electronic music created by international composer and musical director Anthony Gonzalez, from renowned group M83.

VOLTA is a story of transformation. It is about being true to oneself, fulfilling one’s true potential, and recognizing one’s own power to make it possible. Ultimate freedom comes with self-acceptance, and with the liberation of the judgement of others. July 20 is NATIONAL PENNSYLVANIA DAY!


Let's hear it for PA!

National Pennsylvania Day on July 20 recognizes the second state to join the Union.  Once the home of the temporary capital of the United States in Philadelphia, Pennsylvania is also known as the Keystone State. While the source of the nickname has been forgotten, the meaning is not lost. Bridge builders know leaving the vital keystone out of their structure would be folly and would lead to collapse.
 
Pennsylvania played many roles that could be considered keystones. Its vote for independence was split between its eight delegates and played a vital role in deciding to move toward independence and cementing the union of the newly formed country.

Throughout military operations, Pennsylvania provided forces to support the cause. Valley Forge tells the story of leadership and sacrifice of a young and developing army and citizenry.

The Declaration of Independence and the U.S. Constitution were signed in Philadelphia during its tenure as the temporary capital. It was geographically centered among the 13 original colonies.

Pennsylvania Flavor
We can eat our way through history, too! To understand Pennsylvania’s flavor profile, we will start in Lancaster County and the heart of the Pennsylvania Dutch country. 
German and Swiss immigrants brought with them a wide range of hearty recipes that they incorporated into the fresh ingredients available in Pennsylvania countryside. 
From pork and sauerkraut, pot pies to scrapple, they filled the tables with the bounty of the land.

Much of more of the sweeter side of Pennsylvania Dutch flavor finds its way into restaurants than the savory does. The whoopie pie, shoofly and funnel cakes are a tourist and fair favorites, but the home-cooked seasoning of chicken corn chowder or stuffed cabbage rolls often cannot be found in a restaurant.

The Philly Cheesesteak originated here in Philly from a hot dog vendor, Pat Olivieri, who created the cheesesteak in the 1930s. Made with thinly sliced beef rib eye, sautéed onions, peppers and mushrooms, and melted cheese on a long, crusty Italian roll, you can’t go wrong with this Philly favorite.

In Central PA, Hershey has all the chocolate goodies you want, plus an amazing spa, theme aprk, and more in ChocolateTown USA, the sweetest place on earth. Don’t stop there! Pennsylvania’s sweet tooth has deep roots.

If your preference is more on the salty side, Pennsylvania has that covered, too. They’ve mastered soft and hard pretzels and have a terrific competition between four regional potato chip brands.

Full of regional festivals and local cuisine, Pennsylvania is also home of Kennett Square, Mushroom Capital of the United States.  Every year, they shut down the town square for a mushroom festival.  Their mushrooms make it into dishes around the world, even into your very own.

INGREDIENTS
  • 2 cups sugar
  • ½ cup AMERICAN HERITAGE® Chocolate Drink Mix
  • Butter the size of a large egg (about 4 tablespoons, with extra to grease the pan)
  • 1 cup milk

PREPARATION
  1. "Boil until it's sugary on the sides of the pan and puffs up and is thick," is all the undated manuscript offers.

  3. Reduce heat and simmer.
  4. To check if it's done, drop a small ball into a bowl of cold water. It should form a soft ball. Or use a sugar thermometer and cook until 240 degrees F. 
  5. Remove from the heat and beat well with a spoon. The mixture should be very thick and about to set. 
  6. Pour into a greased 8x8-inch baking pan and let cool. Cut into squares and serve.
