Milo’s Ham Glaze




INGREDIENTS

·                     5 lb fully cooked spiral bone in ham

Glaze:
·                     2 cups Milo’s Famous Sweet Tea
·                     1 cup brown sugar
·                     10 cloves 
·                     2 cinnamon sticks


DIRECTIONS
·                     Preheat Oven to 325 degrees 
·                     Combine all Glaze ingredients into saucepan
·                     Bring all Glaze ingredients to a boil 
·                     Reduce heat to medium low and glaze is bubbly
·                     Cook 15-20 minutes until tea is reduced and glaze is light brown  - stir occasionally 
·                     Remove cinnamon sticks and cloves (Tip: Tilt saucepan to side and cloves will float to the top) 
·                     Pour immediately over ham and in between spirals – glaze will thicken as it cools
·                     Cover with foil and bake 1:15-1:30 basting halfway through cook time

INGREDIENTS
·                     1 cup chopped dried figs1 1/4 cups strong hot coffee
·                     1/2 cup butter, softened
·                     1 1/2 cups sugar
·                     2 eggs
·                     1 teaspoon vanilla
·                     1/2 cup vegetable oil
·                     2 oz unsweetened chocolate
·                     melted, 2 cups all-purpose flour
·                     1/4 cup unsweetened cocoa powder
·                     1 1/2 teaspoons baking soda
·                     1/2 cup whipping cream
·                     1 bar (4-oz) semisweet chocolate (chopped)

DIRECTIONS
1.                  Heat oven to 350°F (325°F for dark or nonstick pan). Generously grease and flour 12-cup fluted tube pan.
2.                  In small bowl, mix figs and coffee. Set aside.
3.                  In large mixing bowl, beat butter, sugar, eggs and vanilla with beaters on Speed #1 until mixed, then increase to Speed #4 until smooth and creamy.
4.                  Add oil and melted chocolate. Beat on Speed #1 until mixed, then increase to Speed #4 until creamy.
5.                  Add flour, cocoa powder and baking soda. Beat on Speed #1 until mixed.
6.                  Drain figs, adding coffee to batter. Beat on Speed #1 until mixed, then increase to Speed #4 for 2 minutes.
7.                  By hand, stir in figs. Pour into pan. Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Turn onto cooling rack. Cool 1 hour.
8.                  In small saucepan, heat whipping cream until hot but not boiling. Remove from heat.
9.                  Stir in chopped semisweet chocolate until melted and smooth. Cool 5 minutes or until mixture is cool enough to begin to mound.
10.              Spoon on top of cake and allow to drip down sides of cake. Let stand 30 minutes or until slightly set before cutting.

Enjoy Butternut Squash, Kale Over Fettuccine with Creamy Sage Sauce


Try this recipe for an easy weeknight dinner.

Ingredients
·                     1 tbsp Avocado oil
·                     2 tsp Kosher Salt
·                     1 medium Butternut Squash peeled, cubed
·                     4 cups kale
·                     1 box Explore Cuisine Edamame & Mung Bean Fettuccine
·                     2 tbsp fresh Sage sliced into very thin ribbons for garnish (optional)

Creamy Ricotta Sage Sauce
·                     1 tbsp avocado oil
·                     4 cloves cloves garlic, minced
·                     2 tbsp shallot, minced
·                     1 cup ricotta cheese*
·                     1/2 cup milk
·                     1/4 cup fresh sage sliced into very thin ribbons
·                     1/4 tsp ground nutmeg
·                     Freshly ground pepper & salt to taste

Preparation 15 Minutes + 30 Minutes cooking
1.             Roast butternut squash: Preheat oven to 400 F. If using a whole butternut squash, peel, de-seed and cut into 1/2 inch cubes.
Toss butternut cubes in avocado oil and spread evenly on baking sheet. Sprinkle with kosher salt and roast for 30 minutes or until tender enough that a fork can easily pierce squash.

2.             While the squash is roasting, cook fettuccine. Brink 8 cups of water to a boil in a medium pot, add fettuccine and simmer for 7 minutes to cook pasta to al dente. Drain pasta.

3.             Add baby kale to hot pasta pot, pour drained, hot pasta over the kale and cover pot. This will warm and wilt the kale just enough so it's not chewy.

4.             As squash continues to cook, prepare creamy ricotta sage sauce. Spread avocado oil in saucepan and warm over medium heat. Add minced garlic and shallot to pan and cook until fragrant - about 2-3 minutes. Be careful not to let the garlic burn. 
Add ricotta cheese, milk, sage, and nutmeg to saucepan, mix all ingredients together and bring to a simmer. Stir constantly for 5-7 minutes or until sauce thickens enough to coat a spoon. Add salt and pepper to taste.

5.             Once squash is cooked, remove from oven and transfer to pot with fettuccine and kale. Pour ricotta sauce over the kale, fettuccine and squash mixture and toss to coat.

6.             Transfer Fettuccine to serving dish or plate and serve warm.

INGREDIENTS
Cake:
·                     1 box of white cake mix
·                     12 oz of room temperate Sparkling Ice Strawberry Lemonade

Icing:
·                     1 can of vanilla icing
·                     4 drops of red food dye

DIRECTIONS
1.                Preheat your oven to 350°
2.                Line muffin pan with liners.
3.                In a medium bowl combine your Sparkling Ice Strawberry Lemonade and cake mix, stirring with a whisk until most of the lumps are gone.
4.                Fill each liner ½-2/3 full of batter.
5.                Bake for 18-20 minutes until cupcakes are springy and toothpicks comes out clean.
6.                Let cool completely before frosting.

Create the Perfect Sweet & Salty Snack

Vanilla Caramel Corn Crunch

For an elegant snack, you can whip up a batch of this Vanilla Caramel Corn Crunch.
This sweet and salty snack has all the classic flavors of caramel corn with the addition of Madagascar Bourbon Pure Vanilla Bean Paste to round out the sweetness in every perfectly popped bite. For a fun send off, wrap up some of the popcorn in goody bags. Guests will think about this Oscar party long after they leave. 

12 oz. air-popped popcorn, or 4 (3 oz.) bags natural microwave popcorn
16 tablespoons (2 sticks) butter
2 cups firmly packed dark brown sugar
1/2 cup corn syrup
2 teaspoons Nielsen-Massey Madagascar Bourbon Pure Vanilla Bean Paste
1 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon cream of tartar

Preheat the oven to 250 degrees F. Pop the popcorn, discarding any un-popped kernels. 
Arrange the popcorn evenly in a large roasting pan. Place in the oven.

Combine the butter, brown sugar, corn syrup, vanilla paste and salt in a large saucepan. Bring to a boil slowly. Boil for 5 minutes over medium heat, stirring constantly; do no burn. Stir in the baking soda and cream of tartar, which will cause the sugar mixture to rise. Pour over the warm popcorn, stirring until coated. Bake for 1 hour, stirring every 15 minutes.

Yield: Serves 4
